As a family we enjoy home cooking but don't always have the time or inclination to make difficult or convoluted dishes. I often trawl the internet looking for simple yet effective recipes, but I know what a mine field it can be out there! Through many trials and numerous errors I have compiled a collection of our favourite and fail safe recipes for your enjoyment.

They are all relatively quick and easy to prepare, often using everyday ingredients from the kitchen cupboards but they all have one thing in common - they taste great! Enjoy!

Crepes

  • 110g all purpose flour
  • pinch of salt
  • 2 eggs
  • 200ml milk
  • 75ml water
  • 2oz melted butter

Makes 8 pancakes
  1. Mix all the ingredients together in a large bowl and leave to sit for half an hour.
  2. Heat a frying pan to a high temperature and add a tiny amount of oil to grease.
  3. Add a spoonful of the pancake mixture and swirl around the pan to make a thin coating.
  4. Flip the pancake half way over during cooking. Cook until light to golden brown.
Serve however takes your fancy. I love mine traditional style with lemon and sugar!
