- 1 1/4 cups sifted all purpose flour
- 2 teaspoons baking powder
- 1/4 cup sugar (I prefer caster)
- pinch of salt
- 4 eggs seperated
- 1 1/2 cups milk
- 1 teaspoon vanilla extract
- 1/2 cup melted butter
Makes 8 waffles
- Preheat a waffle iron.
- Beat the egg whites until they are stiff but not dry and transfer to a small bowl.
- In a medium to large mixing bowl lightly beat the egg yolks and add in the milk, vanilla extract and melted butter.
- Sift all the dry ingredients into the bowl and stir just enough to combine and make a smooth batter.
- Gently fold the egg whites into the batter.
- Bake in a seasoned waffle iron on a medium heat until the steam stops escaping.
Delicious served with golden or maple syrup, melted chocolate, vanilla ice cream, or any combination you prefer!
